Ingredients

  • 400g cherry tomatoes (£1.36)
  • 1 pepper (72p)
  • 2 tbsp oil (7p)
  • 400g halloumi (£4.40)
  • 500g block puff pastry (£1.50)
  • Flour (for dusting)
  • 2 tbsp soft cheese (7p)
  • 3 tsp milk (17p)
  • 1 garlic clove (8p)
  • 1 egg yolk (29p)

Instructions

  1. Preheat the oven to 160C / 140C / gas 3. Halve the cherry tomatoes and thinly slice the pepper.
  2. Place the cherry tomatoes and pepper on a baking tray in a single layer. Drizzle over some of the oil and season to taste with salt. Roast for 25 minutes.
  3. Whilst the pepper and tomatoes are roasting, cut halloumi into small slices and lightly brush with the oil.
  4. Heat a frying pan over medium heat and add the halloumi for 6 minutes - flip and cook each side for 3 minutes.
  5. Line a baking tray with baking paper and roll the puff pastry onto a lightly dusted surface to roughly 32 x 22cm and 1cm thick.
  6. Place the puff pastry on the baking tray and score a 2cm border around the edge.
  7. Grate the garlic then mix with 2 tps milk and soft cheese. Spread this on top of the puff pastry, inside the border.
  8. Turn the oven up to 200C / 180C / gas 4. Pour away liquid from the roasted tomatoes and peppers and place them on top of the soft cheese.
  9. Place the halloumi slices on top of the tomatoes and peppers. Then mix the egg yolk and remaining milk and brush this over the pastry border.
  10. Bake in the oven for 25 minutes until the pastry is golden and risen.
