These mince pies can be stored in the freezer for up to 3 months before baking them.

Ingredients

  • 500g pack of sweet shortcrust pastry (£1.90)
  • 1 jar (300g) of mincemeat (£1.17)
  • Plain flour for dusting
  • Milk for glazing

Instructions

  1. Clean your surface, then dust with a small amount of flour.
  2. Roll out the shortcrust pastry and flatten to the thickness of a £1 coin.
  3. Using a circular cutter (around 8cm), stamp out 12 circles to fill a 12-hole bun tin.
  4. You may need to re-roll the shortcrust pastry until you have all 12.
  5. Then spoon a small amount of mincemeat into each of the 12 holes.
  6. Using a smaller circular cutter (about 6 cm), cut the lids for the mince pies. Alternatively, cut different shapes, such as stars.
  7. If you're using circle lids, push the edges together to seal the mince pie and poke a small hole to allow the steam to escape.
  8. If you're freezing the mince pies, tightly cover the tray in cling film and they will keep for 3 months in the freezer.
  9. If cooking now, heat the oven to 200C / 180C fan / gas 6 and brush the top of the mice pies with a small amount of milk.
  10. Bake for 20-22 minutes or until the pastry is golden and the filling is hot.
