Ingredients

  • 4 slices of crusty bread (30p)
  • 3 tbsp olive oil (49p)
  • 2 skinless, boneless chicken breasts (£4.00)
  • 1 lettuce (90p)
  • 1 garlic clove (8p)
  • Small block of cheese (41p)
  • 5 tbsp mayonnaise (18p)
  • 1 tbsp white wine vinegar (10p)

Instructions

  1. Preheat your oven to 200C, fan 180C, gas 6.
  2. Cut the bread into croutons and place on a large baking tray. Pour over 2 tbsp of olive oil.
  3. Bake for 8-10, turning the croutons to brown evenly.
  4. Heat a pan over medium heat and cover the chicken with 1tbsp olive oil.
  5. Place the chicken in the pan to cook for 4 minutes, turn the chicken and repeat until cooked.
  6. Peel and chop or crush the garlic, then mix with mayonnaise and white wine vinegar.
  7. Cut the lettuce into large pieces and add to a large bowl. Grate the cheese.
  8. Shred or cut the cooked chicken into small pieces and add it to the lettuce.
  9. Add the croutons, dressing and grated cheese.
  10. Toss to mix and serve straight away.

We're a not-for-profit scheme, managed by Rhea Projects, helping residents, landlords and park homeowners with free energy saving services and grants for heating, insulation, and low-carbon renewable technologies.
